I made this one for my book club and it was delicious!! I found this one in one of my cooking magazines and hope you find some time to try it out this summer. I was able to grill chicken breast the night before and saved it for the salad the next day. My girlfriends were in love with this yummy lunch date with our book!

I recently took a trip to my neighborhood Chili’s Grill and Bar to try out the new menu. Chili’s created a new menu focusing on using fresh ingredients and also brought back some old time favorites. I have to say I normally order off the guiltless grill menu but decided to venture out and try some of the NEW FRESH tacos today…I was feeling a little spicy!

I ordered the smoked chicken tacos with corn tortillas for two reasons
1. Anything smoked…ummm…yum!!!
2. Corn tortillas are a better choice for you rather than flour.
The plate was super cute on these little taco stands that I wanted to take home to use for entertaining. I enjoyed my tacos and felt that the ingredients were fresh. I really like the smokey chicken flavor with the cilantro cream sauce. My friend ordered the Asian salad with grilled chicken, edamame and avocado. It was huge and loaded with edamame and avocado slices. All the delicious food made us thirsty and the strawberry lemonade was a perfect complement to the meal. Cool, crisp and refreshing!

Summer makes me think of the classic American foods…burgers, potato salad and apple pie!! I got really brave and tried my first homemade pie crust. It was not as bad as I was anticipating and thankfully it turned out pretty delicious in the end. I combined two different recipes to come up with this one. Even if you don’t venture to make your own pie crust at least try to make the filling and use a pre-made crust. Trust me…it is delicious.

This recipe was recommended by a friend who got it from Southern Living a few years back. I decreased the sugar amount from 3/4 cup to 1/3 and find it just as tasty. This is delicious on a hot summer day. I highly recommend this for lunch with girlfriends, bbq or just to sip on one lazy afternoon. Makes 5 cups

Growing up in the hot Texas summers I have many memories of this cake piled with tons of fresh blueberries we picked at the farm. My mother got this recipe from the church cookbook. Sometimes I think some of the best recipes come from community cook books like that one! This cake is super easy to make and is similar to a pound cake. We would eat it with berries and whip cream for dessert and then have a piece with coffee in the morning for breakfast! Try this one sometime soon…you will not be disappointed!

I recently started to try and eat more organic. Honestly it is hard to do at times. But, I was watching the CNN special Toxic America and came across some interesting information. Some produce contains more pesticides than other and by purchasing organic you can reduce your pesticide amount up to 80%. I printed the article out and keep it on my fridge at home to remind me when I make my grocery list what to purchase organic and what is “clean” meaning it does not have a high pesticide level.
Read the article by clicking on the link above to get all the facts but below is the “Dirty Dozen” These are the fruits and vegetables that contain the most pesticides and if possible should be purchased organically.

spinach, kale and collard greens

lettuce
It is an interesting take on things and I still think farm stands and farmers markets are the best thing to purchase produce from. However, it is not the easiest or most convenient at times. I did find this information helpful for my weekly trips to the grocery.

I am not a huge coleslaw fan. I am not too into the creamy dressing? Either way I found this recipe that is Thai inspired and really liked it! I think you should try it for your next BBQ. It would be perfect with grilled chicken or ribs.

I went on a foodie tour in NYC around Greenwich Village. It was fantastic! We sampled food from several restaurants, talk to chefs and learned a little history along the way. Our tour guide was very entertaining and made the entire experience a favorite of NYC. Below is some of the food I sampled along the way.
arincini-fried ball of cheese and rissotto…amazing!
This is cauliflower with dates and currents…it is sweet and savory and ohhh so delicious!
Sweet corn risotto and a mojitto…the mojitto is not part of the tour, but it was recommended at the restaurant that we try it. Ofcourse I had to try it! yum!
Chocolate chip cookies from the Milk and Cookies bakery…the first of two desserts we got on the tour.
I did not try this flat bread, but it was screaming my name as I stood outside. I will one day make this at my house.
