This is from my favorite new cookbook a good friend gave to me. Southern Living Farmers Market Cookbook is amazing. My husband and I devoured this meal and then ate the leftover green beans and corn bread for lunch the next day. I changed up a few small details in this recipe…not so light…but ohh [...]

I just love green peas in the spring time. Each year I find new ways to use the little veggie in new and creative ways. I came up with this orzo for my Easter lunch. It was very simple and actually tasted even better the next day after the flavors sat together and chilled.

YUM! I used my Honey Baked Ham from Easter for this dish and it was excellent! Sweet potatoes and edamame have been labeled ”super foods” being they are full of good for you nutrients. If you have never had an edamame I suggest you try one. This is not my own recipe, however I did leave out a few things and [...]

I think I make this about once a month in the fall and winter. It is a great “go to” soup that comes together in a snap and is easy on the budget. You can serve it with a hearty bread to soak up all the yummness…(yes that’s my new word). This makes plenty of [...]

This is a Tyler Florence recipe, and I just love Tyler Florence. If you ever watch his show Tyler’s Ultimate on Food Network he makes food that you can smell through the TV. The other week I went to the grocery store and decided to buy a fennel bulb. Now, I have never cooked with [...]

As many of you know I am from Texas and LOVE, LOVE, LOVE Mexican food!! I am very picky when it comes to Mexican food and honestly the best is Tex-Mex, in my opinion. I created this Mexican Lasagna one night for my husband and I to enjoy. I decided to use Boca ground tofu [...]
