YUM! I used my Honey Baked Ham from Easter for this dish and it was excellent!  Sweet potatoes and edamame have been labeled ”super foods”  being they are full of good for you nutrients.  If you have never had an edamame I suggest you try one.  This is not my own recipe, however I did leave out a few things and [...]

How cute are these?  They are made with angel food cake, from a box!  I know crazy, right?!  The fairy cakes are so fast and easy, but look ohh so complicated.  They are low calorie too, which makes them even sweeter! 1 box angel food cake mix 1/4 teaspoon almond extract 1.  Preheat oven to 350 [...]

Light and fresh!! These are delicious and so easy.  They come out with a light lemon cake on top and a pudding on the bottom with raspberries laced through.  Amazing!  I brought this to a dinner party and it was major hit!  The cutest part is everyone gets their own individual one.  Lemon love…one of my spring [...]

As many of you know I am from Texas and LOVE, LOVE, LOVE Mexican food!!  I am very picky when it comes to Mexican food and honestly the best is Tex-Mex, in my opinion.  I created this Mexican Lasagna one night for my husband and I to enjoy.   I decided to use Boca ground tofu [...]
