Make these sweet little treats for a brunch, bridal shower or baby shower. They are so easy and you can play with the ingredients. Try using different citrus with different berries. Enjoy!

1 (80z) container soften light cream cheese

1/2 cup powdered sugar

1 teaspoon orange zest

1 tablespoon orange juice

2 (2.1) oz package frozen mini-phyllo pastry shells

sliced fresh strawberries

Stir together the first 4 ingredients in a small bowl. Spoon cream cheese into the center of each pastry shell. Top each with one fresh sliced strawberry and dust with orange zest. yields 28 tarts

**you can make the cream cheese filling the day before and store in the refridgerator…garnish and fill pastry shells an hour before guests arrive.

1 loaf honey wheat bread (sliced)

honey walnut cream cheese (I purchased mine at Panera Bread)

fresh sliced strawberries

strawberry preserves (not jelly)

1. Working with 2 slices of bread at a time spread at least one tablespoon of cream cheese on each slice of bread.

2. spread a tablespoon of strawberry preserves on top of the cream cheese

3. place strawberry slices on one piece of bread so they touch each other but do not overlap

4. press the two bread slices together and using a cookie cutter press out heart shapes or any other shape you would prefer.

Brie is by far one of my favorite cheeses. I will try to find as many ways as I can to add brie to a recipe. I love the taste of apricot of brie together (try my BTA quesadillas). This one can be prepared well in advanced and then baked just before guests arrive. I recommend this one for a bridal shower or ladies lunch.

Yields 24 bites

1 9-inch refrigerated pie crust

8 oz brie rind removed

1 cup apricot preserves (low sugar)

1/4 cup toasted pecans chopped

Preheat oven to 425. Place pecans in skillet and cook over medium high heat until fragrant (about 5 minutes). Unroll pie crust and use a 2 inch round circle cookie cutter to cut out pastry dough. Place each dough round into an ungreased mini muffin pan. Push down each dough circle and prick the bottom with a fork so dough does not puff up while cooking. Bake for 6-7 minutes until light brown. Remove pastry from pan and allow time to cool on a wire rack. Reduce oven temperature to 350. Cut brie into 24 pieces with rind removed. In each tartlet place about 1/8 of apricot preserve, brie and pecan pieces. Bake for 4-5 minutes just until cheese is melted. Watch the tartlets so the cheese does not melt too much or they burn. Serve and enjoy!

My husband and I go to Marlow’s (a restuarant down the street) a lot! We always order the shrimp-crab nachos as an appetizer. One day I decided to take on the challenge and recreate these delicious little chips at home. I did not use shrimp and found that the key to this is FRESH, FRESH, FRESH CRAB! I would serve these with margaritas and beer…then you have a party!

Yields about 20 nachos

4 oz 1/3 less fat cream cheese

1 jalapeno sliced into thin circles

8 oz fresh crab meat shredded

2 tablespoons fresh chopped cilantro

1 teaspoon cumin

1/4 teaspoon cayenne pepper

1 1/2 cups Mexican blended shredded cheese (reserve 2 tablespoons)

20 multigrain tortilla chips

Preheat oven to 375. Mix cream cheese with an electric mixer until smooth. Add cilantro and spices. Using a wooden spoon stir in crab and 2 tablespoons mexican cheese blend. Evenly spread on tortilla chips. Top with cheese and one jalepeno slice. Bake at 375 for 10 minutes until cheese melts.

Happy New Year!!! I figured the only appropriate food to post for New Year’s (beside champagne) was a recipe using black-eyed peas. Being from Texas, having the Mexican influence on food was something I was very accustomed too. This is one of my favorite New Year foods (probably because it is sooo fresh!). Before you ring in the New Year tonight go out and get the short list of ingredients and throw together your Black-Eyed Pea Salsa! It will bring you good luck in 2010!

Ingredients:

1 – 15oz can black-eyed peas

1- 15 oz can black beans

1 1/2 cups frozen corn (thawed)

1 cup cherry tomatoes halved or quartered (depending on how big the tomatoes are)

1 cup fresh cilantro, chopped

2 fresh jalapeno (seeded and diced)

juice of one lime

salt

fresh pepper

3 avocados, pitted, peeled and diced

1. Rinse and drain the beans. I use a strainer over a bowl and run tap water over the beans to get them cleaned off. If you do not rinse your beans your salsa will come out black and gooey. The liquid from the beans will take over the dish and it will not taste very fresh.

Combine beans, corn, tomatoes, cilantro, jalapeno and lime juice in a large bowl. Season with a dash of salt and pepper. Cover and chill for at least one hour. (I have let it sit over night and it is delicious in the morning).

almost ready...about to add the corn

Before you serve your salsa slice up some avocado pieces and mix them in with the dish. Your guests will not be disappointed! I serve mine with scoops corn tortilla chips to get the most amount of dip on my chip! Enjoy this on New Year’s day while watching all the football on T.V.

Enjoy with some scoops tortilla chips

Happy New Year to you all!!

1 (10 oz) package frozen chopped spinach, thawed

1 (14 oz) can artichoke hearts, drained and chopped

1/2 cup reduce fat mayo

1/2 cup grated Parmesan cheese

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon pepper

1 (17.3 oz) package frozen puff pastry

Thaw puff pastry at room temperature for 30 minutes. Drain spinach well, pressing between layers of paper towels. Stir together spinach, artichoke hearts and next 5 ingredients. Unfold pastry onto a floured surface. Spread half of spinach mixture over pastry leaving a 1/2 inch border. Roll up pastry starting with long side, pressing to seal. Wrap in heavy duty plastic wrap. Repeat procedure with remaining pastry and spinach mixture. Freeze for 30 minutes and cut into 1/2 inch thick slices. Bake at 400 for 20 minutes or until golden brown. Yields 4 dozen.

**Rolls may be frozen for up to 3 months. Let thaw for 20 minutes before cutting if completely frozen.

Holiday time is perfect for appetizers! Recipe Rise is going to be showcasing some of my favorite holiday apps for the season. If I could eat only appetizers for every meal I would be a very happy girl! This app was designed with a few of my favorite flavors: baked brie, jalapeno and cranberries. The pretty green and red color from this app gives your table a festive look during the holidays! Make this ahead of time and pop it in the oven before guests arrive.

8 oz brie round

1/2 cup chopped pistachios

12 oz fresh whole cranberries

1 /4 cup craisins

1 jalapeno seeded and diced

juice of 1 lemon

1 tablespoon lemon zest

1 green onion green party only

Mix all ingredients except pistachios and brie in a small sauce pan. Cook over medium heat until the cranberries have popped and a thick sauce develops. Cut brie in half so you have a top and bottom half. (like a sandwich bun) In an oven proof dish spread a thin layer of cranberry mixture. Layer brie, cranberry and pistachios twice ending with the pistachios. Bake at 350 for about 10 minutes or until warm and bubbly.
