I regularly create recipes for myself and husband to enjoy with family and friends. I have turned into an archive for my friends and family regarding recent recipes, menus and foodie ideas. A good friend suggested I blog as a way for everyone to find out recipe information without having to get a hold of me. Instead of picking my brain regarding food, you can pick my blog and hopefully you will find what you are looking for.
Most of my recipes I come up with by re-vamping ones I have read or ate at a restaurant. Two of my recipes have been published in Cooking Light magazine. Hopefully, more will be published in the future. Please feel free to browse the site and let me know of recipes you tried and liked or suggestions you may have to make them even better. Love the new slow cooked chicken recipe. I feel that the crock pot has always been one of the greatest kitchen inventions and never gets utilized enough by home cooks. Keep the slow cookin recipes coming.

I just love your website and all the yummy recipes…and pictures! Meghan (my D-I-L) brought a beautiful (huge) veggie tray to a family dinner and left the remainders with me. I ate a lot of them but still had about 2 lbs of baby carrots and a lb or so of cherry/grape tomatoes. I knew they would go bad if I didn’t do something so I lightly steamed the tomatoes then chopped them in my processor, parboiled the carrots, and put them both (separately) into the freezer. Can you think of something I can make with them? I’m trying to get healthier, eat more veggies, lose weight, etc. I love tomato basil soup, but not the calories, and wondered if pureeing the carrots and adding them would make it creamy w/o the cream. I tried to find a recipe online but couldn’t come up with effective search terms. If you can help, that would be great – if not, no problem but I thought I’d ask…nothing ventured, nothing gained.

Hi Kathy!
I would not use the carrot puree in the soup…it would loose the tomatoe basil flavor. However you can use the carrots in a bread or muffins. Search carrot bread…you may find something and it would be healthy for you. I would imagine using the fall spices now…like cinnamon, allspice, nutmeg with it. I would make marinara sauce with the tomatoes and eat it with a whole wheat pasta. The pasta is high in fiber and protein and VERY good for you. Plus it is delicious.
