I love, love fresh pico de gallo!!! It is delicious on fajitas, quesadillas or just as a dip on your tortilla chip. I decided to add it to brown rice to jazz things up. It turned out to be super delicious and super fast. This is great weeknight meal if you add in cooked chicken. I use brown rice being it is better for you than the white and this time I used organic (I just got it on sale). No guilt with this meal! Enjoy!
2 cups prepared brown rice
1/2 cup white onion
2 roma tomatoes cubed
1/4 cup fresh cilantro
juice of one lime
1 teaspoon
1 teaspoon cumin
dash red pepper
1/4 cup shredded Mexican cheese blend
Chop onion, tomato and cilantro. Add this to the brown rice. Add in lime juice, spices and cheese blend. Serve with cooked chicken or as a side dish. Serves 4
Where is the pico? Rice,lime cheese and a few spices? I think part of your recipe must have not posted correctly.
