I think I make this about once a month in the fall and winter. It is a great “go to” soup that comes together in a snap and is easy on the budget. You can serve it with a hearty bread to soak up all the yummness…(yes that’s my new word). This makes plenty of soup for a crowd and is a pefect as a week night meal. 
2 tablespoons olive oil
5 turkey sausage links (cassings removed)
1 sweet onion diced
2 large zuchinni diced
2 cloves of garlic
1 cup dry white wine
8oz cut leaf frozen spinach
1 teaspoon dried basil
dash of salt
dash of pepper
2- 14oz cans diced Italian tomatoes
3 cups chicken stock
9oz fresh cheese tortellini
1/2 cup fresh grated parmesean cheese
In a large Dutch oven or pot cook the sausage in olive oil and add the onion through pepper to the pot. Cover and cook for about 10 minutes until sausage is cooked through and not pink. Add in the tomatoes and chicken stock. Bring to a boil and add in the cheese tortellini. Reduce the heat to a simmer and cook covered for about 10 minutes. Serve with fresh grated parmesean cheese.
