We had a snow day this past week!! YEAH!! What better day to stay inside and bake? I made some hot chocolate, played a little in the dusting of snow we got, and made some yummy chocolate chip cookies sealed with a Hershey’s kiss! I have a recipe I have used for years that makes chocolate chip cookie bars, which I used in this case. I decided to change them up a bit and put them in mini cupcake pans and top some with Hershey Kisses…how adorable are they?

2 3/4 cups all purpose flour
2 cups firmly packed brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
4 eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
2 cups semi-sweet chocolate chips
48 Hershey Kisses wrapping removed
Preheat oven to 350. Combine flour, sugar, baking powder and salt. Stir in eggs, oil, and vanilla. Add in chocolate chips stirring with a wooden spoon. Using mini cupcake liners place them in a mini muffin tin pan. Spray the pan generously with cooking spray. Fill each liner 3/4 full with cookie dough.
Bake for 12 minutes. Remove from oven and gently press one Hershey Kiss into the top of each cookie. Enjoy!
