Baked Artichoke Brie Dip
8 oz light cream cheese softened
1 cup light mayo
2 green onions chopped (green and white part)
1 teaspoon dried oregano (fresh is better but it is too cold for fresh now)
12 oz drained artichoke hearts coarsely chopped
9 oz brie cheese rind removed and cut into chunks
dash salt
dash pepper
crackers and carrots to serve
Preheat oven to 375. Mix together the cream cheese, mayo, green onions, oregano, salt and pepper. Fold in the artichokes and brie. Put mixture into a baking dish and bake for 15- 20 minutes until bubbly. Serve warm with crackers or carrots for low carb option.
