After enjoying some delicious tamales at La Paz the other night, I can’t get them off my mind. So when I saw your recipe highlighted in my Cooking Light earlier today, I looked it up online and made my way to your site. I am so excited to start trying your creations! I’m going to cook the tamales on Tuesday – one batch for me and my husband, and one batch for my friend that just had a baby. As a VERY important side note, I am also a Texan living in Smyrna, so I am super pleased to have found this outlet for my Texas-style cravings

We love this!!! This is favorite and we have made it often since it appeared in Cooking Light. I have not tried to freeze it yet, but would like to. Have you frozen this? If so, what are your recommendations.
I do a monthly freezer cooking swap with a friend and would love to add this in for their family to try. We each make 4- 6 meals, quadrupled, and then give half to each other. We each end up with 8 – 12 different meals, times two.

I am so excited you enjoyed the Chicken Tamale Casserole! I am not sure on how well it will freeze. I have nevered tried to freeze it before. I love casserole swaps and have participated in them.
