I can not take full credit for this recipe being I found it online. However, this is now one of my new favorite football foods! This time of year I find myself sitting in front of the TV with friends and family watching the best teams throw around the pigskin. I always make sure to have excellent munchies while viewing the games. This dip is super easy and super fast. It is a huge hit with men!! My husband, brother and cousins all LOVE it! I wish I had a better picture of the dip, but really it is cheese, chicken and jalapenos…what not to love? Enjoy!
1 – 8oz package light cream cheese
2/3 cup light sour cream
1/3 cup light mayo
2 tablespoons finely chopped canned chipotle peppers in adobo sauce
2 teaspoons chili powder
2 cups chopped cooked chicken
8 oz shredded colby jack cheese blend
2 green onions finely chopped
2 jalapeno peppers, seeded and minced
1/2 cup fresh chopped cilantro
Preheat oven to 350. Stir together the first 5 ingredients in a large bowl until smooth. Stir in chicken and next 5 ingredients until blended. Spoon cheese mixture into a lightly greased 8 inch square baking dish. Bake for 30 minutes or until bubbly.
