Happy New Year!!! I figured the only appropriate food to post for New Year’s (beside champagne) was a recipe using black-eyed peas. Being from Texas, having the Mexican influence on food was something I was very accustomed too. This is one of my favorite New Year foods (probably because it is sooo fresh!). Before you ring in the New Year tonight go out and get the short list of ingredients and throw together your Black-Eyed Pea Salsa! It will bring you good luck in 2010!
Ingredients:
1 – 15oz can black-eyed peas
1- 15 oz can black beans
1 1/2 cups frozen corn (thawed)
1 cup cherry tomatoes halved or quartered (depending on how big the tomatoes are)
1 cup fresh cilantro, chopped
2 fresh jalapeno (seeded and diced)
juice of one lime
salt
fresh pepper
3 avocados, pitted, peeled and diced
1. Rinse and drain the beans. I use a strainer over a bowl and run tap water over the beans to get them cleaned off. If you do not rinse your beans your salsa will come out black and gooey. The liquid from the beans will take over the dish and it will not taste very fresh.
Combine beans, corn, tomatoes, cilantro, jalapeno and lime juice in a large bowl. Season with a dash of salt and pepper. Cover and chill for at least one hour. (I have let it sit over night and it is delicious in the morning).
Before you serve your salsa slice up some avocado pieces and mix them in with the dish. Your guests will not be disappointed! I serve mine with scoops corn tortilla chips to get the most amount of dip on my chip! Enjoy this on New Year’s day while watching all the football on T.V.
