There are many versions of pinwheels out there for the holidays. I especially like these because they are very festive for with green colors. Plus they can be made in advance and waiting in the freezer for party day! 
1 (10 oz) package frozen chopped spinach, thawed
1 (14 oz) can artichoke hearts, drained and chopped
1/2 cup reduce fat mayo
1/2 cup grated Parmesan cheese
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon pepper
1 (17.3 oz) package frozen puff pastry
Thaw puff pastry at room temperature for 30 minutes. Drain spinach well, pressing between layers of paper towels. Stir together spinach, artichoke hearts and next 5 ingredients. Unfold pastry onto a floured surface. Spread half of spinach mixture over pastry leaving a 1/2 inch border. Roll up pastry starting with long side, pressing to seal. Wrap in heavy duty plastic wrap. Repeat procedure with remaining pastry and spinach mixture. Freeze for 30 minutes and cut into 1/2 inch thick slices. Bake at 400 for 20 minutes or until golden brown. Yields 4 dozen.
**Rolls may be frozen for up to 3 months. Let thaw for 20 minutes before cutting if completely frozen.
