I made this up one evening when reading a book on flavors my brother gave to me. Endive is something I do not use often, however, it is very good when paired with bacon and blue cheese. The endive act like little boats that hold in all the delicious flavors of the blue cheese and bacon. These are perfect to make in advance and have waiting in the fridge for guest to arrive. Serves 6 
8 oz 1/3 less fat cream cheese
6 pieces of center cut low sodium bacon
1 green onion chopped (only green part)
¼ cup blue cheese crumbles
½ teaspoon pepper
1 endive-cleaned and leaves removed
1 teaspoon chopped fresh parsley
1 teaspoon shredded cheddar cheese
Cook bacon according to package directions and drain the fat. All bacon time to drain on a paper towel. Using an electric mixer beat the cream cheese on medium speed until smooth. Add green onion, blue cheese and pepper to the cream cheese. Crumble bacon and add to cheese mixture. Spread cream cheese mixture evenly onto each endive leave. Sprinkle endive with shredded cheddar and parsley. Chill or serve immediately.
