This is a traditional paring of flavors in Italian cooking. This recipe makes me think of my grandfather from Italy. I came up with this version over the summer when the melons were on sale. If you want to do a very easy version purchase pre-cut melons at the grocery store.
2 cups cantaloupe cubed
1/4lb prosciutto thinly sliced
1/2 lb fresh mozzarella cubed
Honey Lime Drizzle
Juice one lime
1 tablespoon honey
dash cayenne pepper
whisk together and drizzle over cantaloupe skewers
Cut mozzarella and cantaloupe into bite size pieces. Wrap each piece of cantaloupe with a slice of prosciutto. Place one cantaloupe with one mozzarella piece onto skewer. Serve with honey lime drizzle. Serves 12 or 6 (yields 2 dozen skewers)
