Fall is here!! One of my favorite fall foods is chili and soups. I love to put them in the crock pot and come home to a delicious meal that has no mess and very little clean up. I came up with this recipe by combining several and adding in my favorite parts. I suggest putting everything together in the crock pot the night before.
3- 15 oz cans of Great Northern Beans drained
1 whole rotisserie chicken breast – shredded and skin removed
1 large yellow onion chopped
1 1/2 cups frozen corn
2 jalapeno seeded and chopped
3 garlic cloves minced
2 teaspoons ground cumin
1/2 teaspoon salt
1 teaspoon dried oregano
3 1/2 cups chicken broth
1/4 cup heavy cream
sour cream
shredded cheddar cheese
tortilla chips
Combine all ingredients in slow cooker except the cream, sour cream, cheese and tortilla chips. Cover and cook on low for 8 hours. Before serving stir in heavy cream. Serve in bowls with sour cream, cheese and crushed tortilla chips. Enjoy! Serves 8
Absolutely delicious!!! This sounded so good when you mentioned it at tennis on Sunday, so I decided to try it. It’s the best white chili I’ve ever had. Thanks for sharing!!
Thank you Christy!!! I love hearing when people try and enjoy my recipes!
