Aren’t these adorable??!!! These are my “semi-homemade” version of red velvet cupcakes. I make these if I do not have a lot time but need a good dessert for a crowd. Try it with other colors for special occasions! Yields 24 cupcakes

1 box red velvet cake mix
1 1/4 cup water
1/3 cup oil
3 eggs
cupcake paper liners
2 tubes of Betty Crocker decorating gel (blue and red)
Cream cheese icing:
1 8oz package cream cheese
1/4 cup butter softened
6 cups powdered sugar
Follow instructions on cake mix box and bake the cupcakes. Allow cupcakes time to cool on a wire rack. Cream together butter and cream cheese for the icing. Add in the powdered sugar one cup at time allowing sugar to blend in with the icing. When cupcakes have cooled ice each cupcake with cream cheese icing. Using the decorating gel draw 4 lines across the top of each cupcake alternating red and blue. Use a toothpick and drag the toothpick down the lines in 4 sections so that the gel drags out across the cupcake. Serve and enjoy!
