Pineapple as a casserole sounds really crazy, but trust me on this one. It is the perfect compliment to a BBQ dinner! I make it every time we have pulled pork sandwiches or ribs. I got this from one of my cookbooks, but it used way too much butter and fat. So, I lightened this recipe up and use it as one of my staples in my spring and summer menus. You could even try it with a breakfast or brunch menu. It is a very versatile recipe. 
1 – 20 oz can crushed pineapple in juice
1 tablespoon sugar
2 tablespoons all purpose flour
1 cup shredded cheddar cheese
1 cup reduced fat of Club or Ritz crackers
2 tablespoons pineapple juice
Drain pineapple juice and reserve 2 tablespoons. Combine sugar, flour and juice in a large bowl. Add cheese and pineapple. Add to 1 quart baking dish coated in cooking spray. Crush cracker crumbs and sprinkle over top pineapple. Cook for 20 minutes in a 350 degree oven.
