After spending a day at the strawberry farm and picking fresh berries all morning I have been on a mission to create recipes with strawberry in them. Try this bread if you have some strawberries in your house. It is very fast and most ingredients you should have on hand. It will freeze nicely for later.
Strawberry Bread for Easter morning!
Strawberries from the farm
1 cup sugar
1/4 cup butter
2 eggs
2 cups of whole strawberries (chopped)
2 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon lemon zest
1/2 teaspoon baking soda
Cream together butter, sugar and eggs. Add in flour, strawberries and the rest of the ingredients. Mix until all incorporated. Pour into a loaf pan coated with cooking spray. Cook at 350 for one hour until center comes out clean. Cool completely on a wire rack if you are freezing.
