Serves 4
2- 8 oz chicken breasts
4 slices of Italian sand which bread
1 Avocado Mexico sliced into 8 pieces
2 roasted red peppers (jar)
4 oz Monterrey Jack cheese with jalapeno
1 tablespoon olive oil
kosher salt & fresh cracked pepper to taste
1. Pre-heat oven to 350 degrees
2. prepare chicken by sprinkling with kosher salt and fresh cracked pepper
3. bake chicken on pan coated with cooking spray (use Pam cooking spray) in oven until internal temperature is 170 degrees
4. while chicken is baking spray a baking sheet with cooking spray and arrange 4 slices of bread on baking sheet
5. Drizzle olive oil over bread slices
6. cut each chicken breast in half and place one chicken breast half on each bread slice
7. lay one half of red pepper on top of each chicken breast
8. place 2 slices of Avocado on top of red pepper
9. top with 1 oz of cheese
10. Bake at 350 for 5 minutes until cheese is melted.
