
So, I was at my computer looking up recipes and came across a yummy chocolate cupcake recipe from Martha Stewart. I decided to use it as my base and changed up a few things. While I was making my store list I got a craving for a York Peppermint Patty…hhhmmmm. I should add the peppermint patties to the Risecup. Delicious!! I also got this cute little brownie pop baking pan. I thought I would use the extra batter to make a few pops for my husband and I. Little did I know my fast little Sunday afternoon activity would turn into these…

Don't you just LOVE them?!
This is how I made them…sit back it is a long journey but worth it in the end!
First I made the cupcake batter for chocolate cupcakes.
3/4 cup unsweetened cocoa powder
3/4 cup all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter at room temperature
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
1 tablespoon cooled brewed coffee
1/2 cup sour cream
12 bite size York peppermint patties

make sure you get the small guys
1. Preheat oven to 350 degrees and line a muffin tin with 12 standard paper liners.
2. Sift together flour, cocoa powder, salt and baking powder.
3. Cream together butter, sugar and eggs one at a time. Add in vanilla and coffee until smooth and creamy.
4. Mix on low speed alternate adding the sour cream and flour mixture ending with the flour mixture.
5. Fill muffin cups halfway with batter and add in one peppermint patty to each.
6. Cover the peppermint patties with the rest of the batter.
**At this point I used part of the batter in my brownie pop pan to make the cake pops**
7. Bake for 20-25 minutes.
And when they are done baking…

parts of the patty come oozing out...YUM!
Now for the icing!! You have to remove your cupcakes from the pan and allow them to cool completely before you ice. Personally, these Risecups are so rich you do not need much icing for them so I decided on a simple glaze, but feel free to add what you prefer.
Glaze:
1 cup powder sugar
2 tablespoons milk (not skim)
Using a whisk stir together until smooth. Dip each cupcake in, top first, and sit it on a wire rack to harden.
While my icing was hardening I had a few cake pops just sitting there. Before my husband ate them all up I snagged a few… and dipped them in the glaze… and rolled them in some nonpariels I found in my pantry. I thought they turned out pretty darn cute. Bakerella would be so proud!

So as I took my cakepop pictures it hit me…cake pops on Risecups! Adorable!!

So there you have it…I started with the intention of making some simple Risecups and ended up with my latest creation Popcakes! They remind of little trees you would find in Candy Land.
