Lovely RiseCups

Valentines Day is just around the corner!!  This year I made peanut butter chocolate RiseCups!  Delicious!  I hope these inspire you to make something sweet for your sweetie!  Below is the recipe for the peanut butter icing…trust me you will eat it with a spoon! YUM!

Then I got a little crafty and decided to add on sugar hearts to the peanut butter icing.  It makes them look festive…don’t you think so?

Peanut Butter Icing

4 oz cream cheese – soften

1/2 cup peanut butter

1/2 stick butter – softened

1 cup powder sugar

** Blend together until smooth and add to your favorite cupcake or eat if off the spoon!

Rise’s Popcorn Mix

When I think of Valentine’s Day I think of chocolate covered strawberries.  They are the easiest treat in the world to make and so delicious!  Give them away as gifts or bring them to  party on a pretty plate to WOW the guests!  I like to use white chocolate but you can really use dark or milk if you prefer. 

6oz Baker’s Brand white choclate baking squares

1 dozen large ripe strawberries, cleaned

1/2 cup crushed almonds

1/2 cup sweetened shredded coconut

1/2 cup valentine colored nonpariels

1/2 cup mini chocolate chips

Melt chocolate in microwave according to manufacturers instructions.  Lay out wax paper on a flat surface and place 1/2 cup almonds down on one piece and repeat with the rest of ingredients.  Using a sheet pan place a piece of wax paper on a sheet pan.  Create an assembly line starting with the bowl of melted white chocolate, toppings then shet pan with wax paper on the end. Holding the strawberry by the stem dip into the white chocolate and immediately roll into one of the toppings.  Lay flat on the sheet pan.  When all strawberries have been dipped, place the sheet pan in the fridge until they have hardened.  (about an hour).  Serve and enjoy!

Snowball RiseCups!!

It is chilly and cold here in Georgia!  Burrrrr!!  I am not a fan of the cold…actually if I could live on water near the warm ocean air I would.  (In my next life)  In the spirit of winter I created some snowball RiseCups…I wanted them to look like the glistening frost on the grass each morning.  I think they came out pretty cute…what do you think?

This is a Tyler Florence recipe, and I just love Tyler Florence.  If you ever watch his show Tyler’s Ultimate on Food Network he makes food that you can smell through the TV.  The other week I went to the grocery store and decided to buy a fennel bulb.  Now, I have never cooked with fennel before but thought I would give it a try.  Seriously, how hard could it be?  A co-worker of mine always brings this fennel dish for lunch.   I asked him for the recipe and his wife, an amazing cook, was sweet enough to give it to me.  I am so glad I asked!  This is an amazing winter dish and I would say it is “company” worthy.

So, I was at my computer looking up recipes and came across a yummy chocolate cupcake recipe from Martha Stewart. I decided to use it as my base and changed up a few things.  While I was making my store list I got a craving for a York Peppermint Patty…hhhmmmm.  I should add the peppermint patties to the Risecup.  Delicious!!  I also got this cute little brownie pop baking pan.  I thought I would use the extra batter to make a few pops for my husband and I.  Little did I know my fast little Sunday afternoon activity would turn into these…

 This is how I made them…sit back it is a long journey but worth it in the end! 

First I made the cupcake batter for chocolate cupcakes.  

3/4 cup unsweetened cocoa powder 

3/4 cup all purpose flour 

1/2 teaspoon baking powder 

1/4 teaspoon salt 

3/4 cup unsalted butter at room temperature 

1 cup sugar 

3 large eggs 

1 teaspoon vanilla extract 

1 tablespoon cooled brewed coffee 

1/2 cup sour cream 

12 bite size York peppermint patties 

make sure you get the small guys

1.  Preheat oven to 350 degrees and line a muffin tin with 12 standard paper liners.  

2.  Sift together flour, cocoa powder, salt and baking powder.  

3.  Cream together butter, sugar and eggs one at a time.  Add in vanilla and coffee until smooth and creamy.  

4.  Mix on low speed alternate adding the sour cream and flour mixture ending with the flour mixture.  

5.  Fill muffin cups halfway with batter and add in one peppermint patty to each. 

 

 6.  Cover the peppermint patties with the rest of the batter.  

**At this point I used part of the batter in my brownie pop pan to make the cake pops** 

7.  Bake for 20-25 minutes. 

And when they are done baking… 

parts of the patty come oozing out...YUM!

Now for the icing!!  You have to remove your cupcakes from the pan and allow them to cool completely before you ice.  Personally, these Risecups are so rich you do not need much icing for them so I decided on a simple glaze, but feel free to add what you prefer.  

Glaze: 

1 cup powder sugar 

2 tablespoons milk (not skim) 

Using a whisk stir together until smooth.  Dip each cupcake in, top first, and sit it on a wire rack to harden.  

While my icing was hardening I had a few cake pops just sitting there.  Before my husband ate them all up I snagged a few… and dipped them in the glaze… and rolled them in some nonpariels I found in my pantry.  I thought they turned out pretty darn cute.  Bakerella would be so proud!

So as I took my cakepop pictures it hit me…cake pops on Risecups!  Adorable!!

So there you have it…I started with the intention of making some simple Risecups and ended up with my latest creation Popcakes!  They remind of little trees you would find in Candy Land.

Mexican Lasagna

As many of you know I am from Texas and LOVE, LOVE, LOVE Mexican food!!  I am very picky when it comes to Mexican food and honestly the best is Tex-Mex, in my opinion.  I created this Mexican Lasagna one night for my husband and I to enjoy.   I decided to use Boca ground tofu nuggets.  Now, before you stop reading, hear me out.  My husband is a TOTAL meat and potatoes type of person.  He HATES anything meatless, vegan, tofu etc.  However, this dish is full of beans and the Boca crumbles plus tons of other fresh flavors and spice you will not miss the meat!!  The best part it has plenty of cheese and beans so you are full! Try this healthy version of my lasagna one night and let me know how it went over in your house. :-)

Baked Artichoke Brie Dip

8 oz light cream cheese softened
1 cup light mayo
2 green onions chopped (green and white part)
1 teaspoon dried oregano (fresh is better but it is too cold for fresh now)
12 oz drained artichoke hearts coarsely chopped
9 oz brie cheese rind removed and cut into chunks
dash salt
dash pepper
crackers and carrots to serve

Preheat oven to 375. Mix together the cream cheese, mayo, green onions, oregano, salt and pepper. Fold in the artichokes and brie. Put mixture into a baking dish and bake for 15- 20 minutes until bubbly. Serve warm with crackers or carrots for low carb option.

We had a snow day this past week!! YEAH!!  What better day to stay inside and bake?  I made some hot chocolate, played a little in the dusting of snow we got, and made some yummy chocolate chip cookies sealed with a Hershey’s kiss!  I have a recipe I have used for years that makes chocolate chip cookie bars, which I used in this case.  I decided to change them up a bit and put them in mini cupcake pans and top some with Hershey Kisses…how adorable are they?

Longhorn Risecups!

For those of you that know me know I am a Texas Longhorn!!  Not only do I love watching my horns win but I love to visit Austin, Texas…it is one of my favorite places.  In the spirit of bowl week I created some Longhorn Risecups.  My brother gave me some new decorating tools and I found a new cupcake recipe (caramel apple)  that I felt the need to try out this weekend.  Here is what I came up with….

My hands are a little shaky on the Longhorn Risecups but the flavor is delicious! Good Luck to my Longhorns this week in the National Championship!!  I wish I could go to the Rose Bowl…maybe one day!
